Precooked sausage was also being held on top of stove at 60°F. Time/temperature control for safety (TCS) foods must be cold held at 41°F. COS by moving to cooler. Discussed holding hashbrowns and batter on ice in future.

One tablet is too concentrated for a standard red/green sanitizer bucket.
