Inspector notes: Observed food contact surface of the metal panel of the bulk ice machine at the bar area with brown debris and residue. Advised PIC that all equipment food-contact surfaces and utensils at any time during the operation when contamination may have occurred. Advised PIC to increase the cleaning frequency of the bulk ice machine at the bar area. (See Base of Operations for violation observed).

Inspector notes: Observed multiple TCS food items (sliced cheese, shredded cheese, sliced tomato, sliced cheese, sliced lettuce) cold holding in temperature danger zone for less than 4 hours and the following items cold-holding above 41F overnight: (blue cheese, and buttermilk ranch). Advised PIC hot and cold Holding. except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: Items were placed in ice bath for cold holding and items improperly cold held above 41F were discarded. (See Base of Operation for violation observed)
