COS: Mayonnaise bottle was stored on the counter overnight, mayonnaise was discarded sine it was held out of refrigeration for more than 4 hours.

TCS food items were placed in freezer to aid in rapid cooling. RIC is to not be used until it has been repaired or replaced and EHS has been contacted to verify RIC temperature is at 41F or below.
