Inspector notes: Observed TCS foods (egg omelets and breakfast sandwiches containing egg, cheese, and meat) below 135F at 119F. Corrective action: PIC notified; educated PIC on proper hot holding temperatures. I suggested to turn the temperature of the hot holding unit up to maintain 135F. PIC turned hot holding unit up 5 degrees from 163F to 168F. PIC chose to discard TCS foods below 135F.
