Inspector notes: At time of inspection, observed several Temperature Control for Safety (TCS) foods being held at temperatures above 41 degrees F in the reach-in cooler (RIC) in the main kitchen. PIC states the facility had a delivery this morning, before this inspection began. Thinking that the items could have elevated temperatures due to the cooler doors being opened while storing delivered items, we left the cooler closed and undisturbed for over an hour, while performing the tourist accommodation inspection. Once an hour had passed, the temperatures of the items in the RIC were re-checked - the temperatures of the items had not changed. COS: PIC discarded the TCS items that registered above 41 degrees F. CA: PIC has contacted a technician to check the RIC to ensure that it is capable of holding TCS...

Inspector notes: At time of inspection, observed numerous Time/Temperature Control for Safety (TCS) foods stored at temperatures above 41 degrees F (milk at 51 degrees F; Butter at 45 degrees F; Boiled egg at 47 degrees F). COS: PIC discarded all TCS items that were above 41 degrees F. PIC stated the items had been in the cooler for several days. PIC did adjust the thermostat of the unit and confirmed that no TCS food items will be stored in the unit, until it is confirmed that the unit is capable of cold-holding TCS food items at 41 degrees F or below.
