Inspector notes: Ready to Eat TCS foods shall be held for no more than 7 days and then discarded. Observed multiple foods such as house made ceasar dressing, house made 1000 island dressing, and pulled pork that were made 4/10-4/12. All foods were voluntarily discarded by PIC.

Inspector notes: A variance or HACCP plan is required when using Reduced Oxygen Packaging for TCS foods and holding it for more than 48 hours. Observed multiple TCS foods such as smoked chicken and raw beef and chicken that has been vacuum sealed and held for more than 48hours. PIC will no longer use vacuum sealing for storage of TCS foods.

PIC informed me that pest control had come one week prior and showed invoices. Continue to work with pest control to aggressively treat.

Inspector notes: TCS foods shall be kept 41F or below. Observed meat loaf and collard casserole being stored above the fill line on a prep top that had a temperature of 55-56 degrees. Observed cooked crab stored in a an ice bath that had temperatures of 56 degrees. All foods had been out of refregeration for lesss than 4 hours. PIC placed meatloaf and casserole in reach in to cool. Crab meat was submerged in ice to rapidly cool. PIC discarded cheeses. Foods shall be stored below the fill line and containers fully submerged in ice to ensure foods stay at 41F or below.
