6-1A - proper cold holding temperatures
Inspector notes: In the walk-in cooler, I observed 2 separate containers of raw chicken tenders at 46.5 degrees fahrenheit, as well as cut tomatoes and cut lettuce at 47 degrees fahrenheit. PIC (Paula Roberts) was closing the restaurant at 11:00 and we agreed no food from this cooler would be served prior to closing and the food would be discarded. Repairmen were scheduled to come today, 2/15/2024 to attempt to repair the cooler.

Inspector notes: Observed the inside ceiling of the microwave oven in the back kitchen area close to the toaster oven that was badly soiled. All food contact surfaces of equipment shall be clean to sight and touch and cleaned regularly throughout the day to prevent contamination. PIC stated she would work on the microwave oven today.

Inspector notes: Observed 2 mops in the back storage closet on the stored on the floor. When not in use, mops shall be hung to air dry. PIC stated that the hangers on the wall will not hold the mops and they fall down. Mop hangers shall be repaired to hold mops properly to air dry.

Inspector notes: Observed hash browns and food debris on equipment beside the fryer area, soiled food containers, etc. Also observed that the vent/grill on the serv=ware reach-in freezer is still broken. Equipment shall be designed and constructed to be durable and retain their characteristic qualities under normal use conditions. PIC is working with ownership to correct this equipment issue.

Inspector notes: Observed men's restroom "out of order". Observed sewage from toilet all over the toilet seat, tissue paper stuck to toilet seat. PIC had a sign on the door that the restroom is out of order and they were using the women's restroom as a uni-sex restroom. Plumber is scheduled to be there to work on the plumbing issues today (2/15/2024). Restaurant will close at 11am and will not reopen until Saturday (2/17/2024) if repairs are complete.

Inspector notes: Observed multiple areas with holes in the ceilings and ceiling tiles badly soiled. Observed areas where the cove molding on the floor is missing causing large holes and the floor is badly soiled. Observed ceiling tile loose in back storage room. Recommend a very deep cleaning and a regular cleaning schedule to overall kitchen and facility. These areas shall be designed, constructed and installed in a manner which makes them easily cleanable and easy to maintain.
