Inspector notes: Observed whipped cream cold holding at temperature higher than 41F. CA: TCS foods that are cold holding must be held at a temperature of 41F or below. COS: PIC added more ice to the container, when the ice bath was not effective, the whipped cream was placed in the refrigerator and replaced with a whipped cream from storage cooler that was at 38F. Discussed with PIC that they may want to put the whipped cream on time, or switch between two or more whipped cream canisters from ice bath to cooler every hour.
