Inspector notes: Observed cooked ginger soy sauce cooling improperly due to improper cooling methods. The ginger soy sauce was cooked at 2:30 PM, temping 122°F at 3:05 PM, then temping 105°F at 4:15 PM. The sauce was originally sitting out at room temperature at the start of the inspection, in a large, deep container. COS by separating sauce into smaller portions and leaving uncovered in the walk in cooler. Will email PIC helpful handout on proper cooling methods. Highly suggest to put food cooling in small, shallow pans left uncovered in walk in cooler.

Inspector notes: Observed chicken and egg rolls utilizing Time as a Public Health Control (TPHC) not discarded after the 4 hours. These items had time documentation of 11 AM- 3 PM, and instead of being discarded, they were placed in reach in cooler near register at 3:15 PM. Must use or discard TCS food utilizing TPHC within 4 hours of removing food from temperature control. COS by discarding.
