Inspector notes: Food debris buildup and mold found on the following equipment: underside of large mixer and top of mixer attachment, dough press machine, meat grinder, and meat slicer. Observed black buildup in 2nd ice machine in main kitchen and ice machine in beverage area. CA: The food-contact surfaces of equipment shall be kept free mold and shall be clean to sight and touch. Facility unable to clean dough press and large mixer at time of visit. However, other equipment were able to be cleaned. EHS will do informal inspection in 72 hours for correction of violation.
