Inspector notes: Observed multiple employee drinks in food-preparation areas (drink in coffee mug on prep table, open water bottle in reach in cooler next to facility food). RCA: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drink in from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.

Inspector notes: Observed shredded beef (prepared at 11am) being held at a hot-holding station temped at 65F (Temp taken at 11:30AM). Observed chicken at hot-holding station to be temped at 118F (prepared at 11AM). COS CA: PIC removed items from hot-holding and reheated both meats to 165F. Reheating for hot holding shall be done rapidly and the time the food is between the temperatures of 41°F (5°C) and 165°F (74°C) and 41°F (5°C) and 135°F (57°C).
