Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. Person in charge (PIC) states a technician is scheduled to service the unit today or tomorrow. Corrected on Site (COS): The chili was discarded as it was prepared 8/12/25 and left in the unit overnight. All other food items were placed back in the walk in cooler as they were placed inside of the unit prior to my arrival.
