Inspector notes: Observed can opener and ice machine with accumulation. Informed PIC to ensure to clean more frequently to avoid build-up. PIC stated they will clean both as soon as possible.

6-1A - proper cold holding temperatures
Inspector notes: Observed multiple items in walk-in cooler not in temperature. Items including: cheese at 45F, raw beef at 46F, raw chicken at 43F, and chorizo at 50F. Observed raw chicken in prep-top cooler at 47F. Informed PIC the walk-in cooler needs to be maintenanced. I also suggested putting less raw chicken in each metal container so the raw chicken can get down to temperature. All items in the walk-in cooler were prepped a couple days ago so the food items need to be 41F or below. As for the prep-top cooler the chicken came directly from the walk-in cooler which explains why it was not in temperature. PIC states they will get the walk-in cooler repaired and place less food in the containers so the food can efficiently cool down and maintain 41F.
