Inspector notes: Observed time/temperature control for safety (TCS) foods in prep top/reach-in unit being cold held above 41°F. Ambient temperature of cooler was 41°F with the temperatures of TCS foods ranging between 43-47°F. TCS foods must be cold held at 41°F or below. COS by moving food to another cooler. Kitchen area is fairly hot and is likely contributing to the temperature abuse. Ambient temperature of cooler must be lowered to around 35°F to help compensate for the heat in kitchen. Make sure to keep lids closed when not in active use.
