Inspector notes: Observed employee cleaning raw fish then proceeded to take off gloves and wipe hands with a paper towel without washing hands before moving on to a different task. COS CA: Instructed employee to wash hands properly before moving on to a different task and he did. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks.

Inspector notes: Observed sanitizer in mechanical dishwasher to not have adequate concentration. COS CA: Dishwasher sanitizer was primed and a new dishwasher cycle was ran. The concentration was found to be over 50 ppm with test strips. After being cleaned, equipment food-contact surfaces and utensils shall be sanitized in chemical manual or mechanical operations, including the application of sanitizing chemicals by immersion, manual swabbing, brushing, or pressure spraying methods. Contact times shall be consistent with those on EPA-registered label use instructions by providing a contact time of at least seven seconds for a chlorine solution of 50 ppm that has pH of 10 or less and a temperature of at least 100ºF (38ºC).
