Inspector notes: Observed exposed concrete in the back kitchen area, along with broken cove base tiles. Floors, Walls, and Ceilings, Cleanability. Except as specified under subsection (2)(d) of this Rule and except for anti-slip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Informed the PIC, that these issues located in the back of the kitchen will be given one month to be repaired.

Inspector notes: Observed employee drinks and food located on the food prep table and the front food service counter. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS by moving food and beverages to their designated area.

Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration between 200-400ppm. COS by discarding and making a new sanitizer solution, holding at 200ppm (quat).
