CA: Cold held TCS foods shall maintain an internal temperature of at least 41F or below. COS: Sauces were out of temperature more than 4 hours and PIC discarded. Discussed use of time as a public health control to address concern of product freezing when stored inside the cooler.

Inspector notes: Observed potentially hazardous TCS foods (fried eggs, sliced cheese, sausage patties, avocado spread) improperly cold holding above 41 F in the reach-in cooler. Ambient air temp within the cooler was reading 50F. CA: PIC moved all foods out of the cooler and in to the walk-in freezer since temps were out for less than 4 hours. Discussed ensuring all foods are at 41F or below when placed in the unit. Cooler will not be used to store TCS foods until serviced by a licensed technician and re-checked by health department.
