Inspector notes: Observed no paper towels at the hand sink in the back of the kitchen at the ware washing area. Upon discussing, PIC stated they have been waiting for the dispenser to be replaced. CA: PIC stocked sink with paper towels. PIC advised to place a stack/ roll of paper towels at the sink so that they are available for use. Each handwashing sink or group of adjacent handwashing sinks shall be provided with: individual, disposable towels; or a continuous towel system that supplies the user with a clean towel.

Inspector notes: Observed the dish machine not sanitizing between 50-100ppm. Further observed that the chlorine dispensing container was empty. Upon discussion with PIC there was found to be no more chlorine sanitizer available for the dish machine. RCA: PIC advised to have employees use the 3 compartment sink for sanitization until the chlorine sanitizer is available. Items in the dish machine are to be re-sanitized in the 3 compartment sink.
