Manager on duty was unsure on how long queso had been out of temp so queso was discarded and fresh queso from can was reheated to at least 135F before placing in dispenser. Corrective action: Ensure queso is heated to at least 135F before placing in dispenser and ensure queso remains 135F at all times.
