Employee reported that surfaces are wiped with wet cloths from soapy water solution, not sanitizer, periodically throughout the shift. Corrected on site - Employee prepared bucket with sanitizing solution and relocated cloths to sanitizer. Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.
