Inspector notes: Raw shelled Eggs were observed out at room temperature being held using Time as a Public Health Control. Once the Inspector entered the facility an employee took some of the raw eggs and quickly placed them in the walk in cooler. The Health Inspector proceeded to the walk in cooler to take the temperature of the raw shelled eggs. Temperature of the eggs was observed at 63 Degrees Fahrenheit. Once raw eggs are under TPHC THEY CANNOT BE PLACED BACK UNDER TEMPERATURE CONTROL.THEY MUST BE DISGARDED AFTER THEY REACH THE SET TIME ON THE STICKER.
