Inspector notes: Observed a pan of raw spicy chicken and a pan of raw chicken at 47 degrees fahrenheit and also observed packaged cut lettuce at 48 degrees fahrenheit in the walk-in cooler. Observed same issue on the previous inspection and discussed with owners. Discussed with owners that issue is probably due to damaged door and damaged gaskets and I asked them to please give me a date these issues can be resolved and I will recheck at that time. I did observe other boxes of chicken at 41 degrees fahrenheit. PIC discarded all chicken and lettuce that was out of proper temperature.
