Brisket was placed in metal containers, covered, and stacked on top of each other in reach-in cooler upon closing on 1/13. Proper cooling shall occur within a maximum six hour window which this has exceeded. CA: PIC discarded all items not within the proper cooling time and temperatures. RCA: Recommend not stacking cooling bins, venting lids and/or placing in an ice bath to facilitate cooling.
