After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. Allow dishes to completely air dry before stacking. Re-wash, re-rinse, and re-sanitize dishes before using. Coach employees to pyramid stack the clean containers and allow them to air dry before stacking to be stored. Person in charge removed the wet food containers.
