Inspector notes: Observed mechanical warewashing machine reaching a max rinse temperature of 154F, verified by the facility's irreversible high-temp thermometer. Data plate on the dish machine states the final rinse must reach 180F. Per PIC, unknown when the last time the temperature was verified and several cycles of dishes had already been ran. COS: Dishmachine will be serviced and not be used until verified that it is reaching the minimum final rinse temp. IN the meantime, all dishes will be cleaned and sanitized in the 3 compartment manual warewashing sink.

Inspector notes: Observed no sanitizer in the sanitizer compartment of the 3 compartment ware washing sink while dishes were soaking in the sanitizer compartment(0ppm on inspector test strip). Discussed with PIC. PIC turned down the water temperature on the mechanical dispenser and will have an employee remake the solution. Discussed ensuring that food debris is removed in the wash compartment and before dishes/utensils make it to the sanitize compartment.
