Inspector notes: Observed raw fish prepped on 2/10 reading at 47 degrees in the walk in cooler. PIC moved this tray into the freezer to maintain temperature. Except as specified under subsection (2)(d) of this Rule and except for antislip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Observed broken floor tile and base in need of repair rendering them not easily cleanable. Advised PIC to contact Health Authority if additional time is needed to get repairs completed.
