Inspector notes: Observed multiple TCS foods at temperatures above 41F in first reach in cooler (See temperature log). Observed ambient temperature of the first reach in cooler at 44.5F. Observed leaking from the top of the first reach in cooler. CA: TCS foods must be held at a temperature of 41F or below. COS: All TCS foods in that reach in cooler that were above 41F were discarded. Maintenance is currently working on cooler. Any TCS foods that were properly cold holding were moved to the walk in cooler. There were about four or five salads in the reach in cooler that were in the splash zone of the leak. These salads were discarded due to leak.

Inspector notes: Observed pork in gravy cooling in first reach in cooler, and it did not make the correct temperature of 70F within two hours. CA: 1. Cooked time/temperature control for safety food shall be cooled: (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); P COS: This item was discarded.

Inspector notes: Observed packages of cranberry juice, salt, and shelf stable juices stored on directly on the floor in the dry storage area. Observed a box of sweet potatoes stored directly on unclean floor in walk in cooler. CA: 2. Food in packages and working containers may be stored less than 6 inches (15 cm) above the floor on case lot handling equipment if the equipment can be moved by hand or by conveniently available apparatuses such as hand trucks and forklifts. COS: the dry goods were removed from the floor and placed on the racks more than 6 inches off the floor. Discussed with PIC to unbox potatoes, place them in clean, durable container, and store them at least 6 inches above the floor.
