Inspector notes: Observed multiple items stored in the reach-in coolers (chef base and pizza cooler) and pizza prep-top cooler holding above 41F (See temp log). CA: Items placed in the units within 4 hours were placed in another unit. Items in the prep-top cooler were placed on Time as a Public Health Control to be discarded or used within 4 hours. RCA: Units shall not be used for holding items until repaired. Prior to use, the PIC shall notify the Health Authority once units have been serviced and holding 41F or below for clearance.

Inspector notes: Observed the multi-QUAT sanitizer at the 3-compartment sink not pulling enough solution to sanitize within the recommended range of 150-400ppm. RCA: PIC shall have chemical service representative come out to adjust the dispensing unit. Until automatic dispenser is serviced, staff shall manually add sanitizer and use test strips to ensure proper levels. Once the dispensing unit has been checked by the chemical service rep, the PIC shall notify the Health Authority for clearance.
