Inspector notes: Observed the gaskets of the cold hold units and other non-food contact surfaces to have an accumulation of food debris and build-up. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC to implement a cleaning schedule to ensure that the non-food contact areas, throughout the kitchen, maintain a level of cleanliness to prevent build-up and accumulation of food debris.

Inspector notes: Observed accumulation of mold-like substance in both the drive-thru soda machine and the self-service soda machine. Observed slight accumulation of soil in the ice machine. In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Note: PIC will clean and sanitize soda machines and the ice machine.
