Inspector notes: Observed soil/dirt buildup on inside of ice bin. Ice bin supplied ice for other unit as well. Informed PIC and CFSM that all parts of machine need to be cleaned regularly. Instructed PIC and CFSM that ice in machine needed to be discarded and machine needs to not be used until properly cleaned. Ice was discarded outside.

Inspector notes: Observed dirt and dust buildup on can opener blade. Also had rust buildup on blade. Informed PIC that can opener needed to be cleaned regularly. PIC removed can opener out of service and placed in warewashing.

Inspector notes: Microwave in back food storage area has grime and oil buildup on top inside of microwave. Informed PIC that microwaves do have food contact surfaces and thus need to be cleaned regularly. PIC added microwave cleaning to list of closing tasks and removed microwave from service.

Inspector notes: Prep top cooler in main kitchen had multiple TCS items (lettuce, shredded cheese, etc.) at temps of 50 degrees or above. Informed PIC that even though lunch service was ongoing and prep top was in use, TCS foods still needed to be kept at 41 degrees or lower and prep top needs to be closed as much as possible to keep foods at the correct temperature. PIC emptied out both top and bottom of prep top cooler and removed it from service to allow unit to cool back down. COS
