Inspector notes: Time-temp controlled foods for safety (TCS) in coolers >41F. PIC instructed to discard all foods >41F; company maintenance men came to work on 2 reach-in coolers. Can't use until repaired and inspected by office. Call office for re-check or coolers. Coolers should maintain 38F or lower on thermostat when doors are opened. Also reach-in freezer thermometer must be at 0F. Pic was also given a temperature log to record TCS food inside coolers every morning and night sift in addition provide documentation or repairs. Menu must be revised this week to utilize the 2 working coolers in storage room until other coolers are repaired.
