Inspector notes: Observed pimento cheese holding above 41f in the reach-in cooler in the main kitchen. Observed cheese and lettuce holding above 41f in the prep top cooler in the main kitchen. C/A: TCS foods shall be maintained at 41f or below when cold holding. COS: Pimento cheese discarded. Cheese and lettuce prepped within 2 hours, items were placed in walk-in cooler to continue cooling.
