Inspector notes: Observed multiple TCS foods in reach in cooler in main kitchen walk in cooler with temps above 41 degrees, chicken wings 48, raw catfish at 46, raw chicken tenders 49, raw chicken breast 49, bleu cheese 48, shredded cheese 47, shrimp 48, salmon 49, ground beef 50. EHS informed PIC that TCS foods shall be maintained at 41 degrees or below. EHS and PIC discussed the temp in WIC, thermometer on outside was not functioning. EHS thermometer showed temp at 53. EHS instructed to contact maintenance to have unit serviced. EHS also instructed PIC to discard all meats, prepped veggies, prepped sauces and cheese from WIC. EHS will return to check that units are serviced and working properly prior to opening time.
