Inspector notes: Observed deli meats, tomatoes, and cheese to temp above 41F. Employee stated that reach in cooler has been opening and closing because of the lunch rush. Ambient temperature reading 47F in reach in cooler. RCA: Told PIC that they need to discarded of all TCS items in the cooler that were above 41 degrees. Operator stated they will move forward with using time instead of temperature control for this portion of the operation.
