Inspector notes: Observed improper cold holding of potentially hazardous TCS foods above 41F. In the reach-in cooler horchata was 55F, stored ambient on the counter top was mayo 70F, dulce de leche 72F (manufacturer's packaging on each stated "refrigerate after opening"). CA: Cold held TCS foods shall maintain an internal temperature of 41F or below. COS: Horchata and mayo were out of temperature for less than 4 hours and were moved to the reach-in freezer to rapidly cool. Dulce de leche was discarded.
