Inspector notes: Observed chicken wings covered in a deep pan actively cooling in walk-in cooler. COS: Wings were still within cooling window. PIC asked to place wings in ice bath uncovered to rapidly cool. PIC advised to place wings on shallow pans to properly cool moving forward.
