Inspector notes: Found TCS foods out of date in the WIC: shrimp (11-3), pork (11-10), and noodles (10-27). The shrimp had a very strong odor to it, but CFSM stated the date was supposed to be 11-17. COS: All foods discarded and Charlton EH instructed CFSM to properly date mark TCS foods as the CFSM stated they just put a new sticker on the containers when adding new product instead of removing the old stickers.

Observed a broken plastic container with raw meat in the RIC. CA: Charlton EH ordered CFSM to discard the container and the contents due to possibility of foreign object contamination.

Inspector notes: Observed a plastic storage bin outside of the FSE that contained dirty water with grease and mold/mildew. CFSM explained that they used that container for mop water because the mop bucket is not big enough and to "wash a filter". CA: Charlton EH ordered the CFSM to immediately stop washing the filter in the bin and to stop using this bin and empty its contents into the mop sink to properly dispose of the sewage inside of it and then throw away the container.

Inspector notes: Discovered multiple severely dented, bloated, or rusted cans (sauce, sliced/chopped vegetable) in dry storage. COS: CFSM removed from stock to receive vendor credit. Charlton EH went over checking cans received from supplier for damage and to make an area and sign to separate them from working cans. Discovered three (3) cans of biscuit tubes that had busted open in the walk-in-cooler (WIC). COS: Tubes discarded.

Inspector notes: Observed food residue and/or grease build-up on multiple surfaces throughout the kitchen such as cooking surfaces, ceilings, walls, floors, and shelves. Observed build-up of oil substance on flat metal pans. CA: Charlton EH instructed CFSM to thoroughly clean the entire kitchen, starting with food prep areas and then from top down for walls, etc. Metal pans were placed back into 3-comp sink to reclean.

Inspector notes: Observed extreme grease build-up around the flat top at fire suppression nozzles, front extensions, underneath on the floor, and behind. Observed grease build-up behind and under friers. Observed grease build-up on ceiling and walls. Detected acrid smoke during inspection that should not be present if hood systems/equipment is working properly. CA: Charlton EH instructed CFSM to have hood serviced by a professional company at least once and to also increase the frequency at which the hoods are cleaned as he stated they clean the two hood systems themselves. Observed damaged walls, ceiling tiles, and coving. CA: Charlton EH instructed CFSM to have damage repaired.
