Inspector notes: Observed in the reach in cooler #1, a bag of raw breaded chicken tenders stored above multiple bottled drinks. Also observed at the cooler drawer a container of raw chicken philly stored above multiple vacuum-sealed bags of raw tilapia. Advised PIC that raw and ready-to-eat items shall be stored/arranged according to final internal cook temperature. COS: OUC relocated items in both the reach in cooler and cooler drawer.

Inspector notes: Observed food employee rinse butcher knives at vegetable sink and store as clean without sanitizing. Advised PIC after being cleaned, equipment food-contact surfaces and utensils shall be sanitized in: a contact time of at least 30 seconds for other chemical sanitizing solutions. Advised PIC to cease washing butcher knives at the veggie prep sink and utilize the 3-compartment sink to wash, rinse, and sanitize.
