Inspector notes: Observed fried rice on counter next to the fryer basket on time without a time stamp and exceeding 70 degrees F. Advised PIC if time without temperature is used as a public health control up to a maximum of 6 hours, the foods shall have an initial temperature of 41 degrees F. or less when removed from the temperature control and the food may not exceed 70 degrees F. COS: PIC discarded fried rice.
