6-1A - proper cold holding temperatures
Inspector notes: EHS observed oat milk Barista blend, whole milk, and mocha milk out on the counters. The Oat Milk states on the box that once it is opened it must be refrigerated. The other items are TCS and must be refrigerated at all times at degrees 41 and below. EHS asked PIC about why do they have the product just sitting out on the counter. He stated that they sit it out while they are making drinks. EHS instructed the items to be placed in the refrigerator. Below are the temperatures that were observed oat barista blend- 45, Whole milk-50, mocha milk-63. CA-PIC needs to make sure that employees are not leaving TCS items and items that must be refrigerated out on the counter. The longer they sit out the temperatures increase.

Inspector notes: EHS observed several employees handling food with no hair restraints and some employees had on watches and bracelets while handling food. CA-EHS questioned what hair restraints do they have for employees that are handling food. PIC stated that he was unaware that employees have to wear hair restraints and no jewelry (bracelets, apple watch bands etc). CA-PIC explained that any employees handling food MUST have some type of hair restraint and no jewelry unless it is a plain wedding band.

Inspector notes: EHS requested inspection report. The one they had posted was a 100 from Last April 2024. The inspection is out of date and not the last inspection that was done. CA-PIC needs to make sure that the facility obtain the most up to date inspection report and make sure that it is posted for public viewing.

Inspector notes: EHS observed two single use 7brew cups stored in a clear container that contained matcha. EHS asked PIC do they use this product to serve to customers? He stated "yes" EHS informed PIC that they cannot reuse single use items as a scoop to get product out of the container. They will need to get a utensil with a handle and make sure the handle is not touching the product.

Inspector notes: EHS observed employee cups and cell on the counter where the hand sink is. Also there was a clear 7Brew cup on the shelf next to the hand sink where the caramel sauce is stored. CA-EHS asked PIC is there a designated area for employee belongings. He stated yes and showed me the area in he back which is away from items that is being served to the customers. PIC needs to make sure that employees store all of their personal items in a designated area.

Inspector notes: Observed facility lacking employee health forms. PIC could not provide health forms for employees currently working. PIC reached out to upper management and informed EHS that papers were signed through e-signature. EHS asked if those forms could be provided. Upper Management was unable to send or provide those forms. Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food; Pf and Informed PIC to have employee health reporting forms on file, and that forms are to be completed before employee begins to prep any food or drink item. This must be corrected by 06/14/24

Inspector notes: EHS observed female employees preparing drinks without proper hair restraint. PIC provided hats. Later on during inspection, a female employee walks in and begins to prepare a drink without hair restraint. EHS asked PIC if there were any more hats, and PIC grabbed hats for all employees working in kitchen. i) Hair Restraints. 1. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. PIC provided hats for all employees. This was COS.
