Inspector notes: Observed several TCS foods in walk-in cooler to be above 41F (see temperature log). COS: PIC stated walk-in cooler was left open during prep that morning. All TCS items held less than 4 hours were placed on ice bath on in walk-in freezer to rapidly cool. TCS items held more than 4 hours discarded. Cooler needs to be verified to hold at 41F or below before TCS items are held.
