CA: Cold TCS food shall be maintained at 41F or below. COS: Not noted as corrected on site. CFSM discarded all TCS foods coldholding above 41F and prepped over four hours prior. All TCS foods found to be prepped less than four hours prior were relocated to freezers for rapid cooling. Walk in cooler will be serviced and rechecked by Health Department before being used to coldhold food items.

Cut lettuce was not within time parameters and PIC discarded lettuce. Discussed having maintenance look into cooling issue with left side of prep top cooler.
