Inspector notes: Observed a container of cooked potatoes that did not reach the required temperature of 41 degrees or below after cooling for hours. The potatoes were observed at 48 degrees f. The cooling process began at 11:00am. The temperature was observed at 6:00 pm. As a result, the potatoes were discarded by the PIC. Cooling must be properly documented.
