High Priority - - From initial inspection : High Priority - Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Checked dish machine not sanitizing properly final rinse not reaching 160f engineering is working on the dishmachine at time of inspection. Recommend to use 3 compartment sink wash, rinse and sanitize checked 700 ppm concentration final rinse. Until dishmachine is repaired. **Warning** - From follow-up inspection 2026-04-09: Checked dish machine not sanitizing properly final rinse not reaching 160f engineering found out the heating elements are burnt out have to order two elements for the dishmachine to work properly on the final rinse cycle. Spoke to engineering placed order today on Thursday. Call back on the dishmachine given to Monday 4/13/26. Three compartment sink checked 700ppm quat ammonia wash,rinse and sanitize will be using until dish machine part is received. **Time Extended**
