Per manager he just turned the cooler on. Cooler temperature was at 49F and dropping to 48F within seconds. Temperature of cooler at end of inspection. Explained to manager chicken can only be held hot above 135F or cold 41F or below also gave him the option to keep chicken wings on a 4 hour hold time using time as a public health control for food safety.
