Inspector notes: FOUND A 0PPM READING AT THE LOW TEMP DISHMACHINE. THE SANITIZER BUCKET WAS EMPTY. INSTRUCTED THAT THE MACHINE SHOULD BE CHECKED EACH MORNING PRIOR TO USING TO ENSURE THAT THERE IS SANITIZER IN THE BUCKET AND THAT IT IS AT THE PROPER STRENGTH ONCE A CYCLE IS RAN. MANAGER CHANGED THE BUCKET AT THIS TIME, A SECOND CYCLE WAS RAN AND THERE WAS STILL A 0PPM READING. CHEMICAL TEST STRIPS ON PREMISES. A READING OF 100PPM IS REQUIRED AT ALL TIMES AT THE LOW TEMP DISHMACHINE. CRITICAL VIOLATION 7-38-030 ISSUED. MACHINE TAGGED HELD FOR INSPECTION AND MUST NOT BE USED UNTIL SERVICED AND REINSPECTED BY THE CHICAGO DEPT OF HEALTH. INSTRUCTED THAT ALL DISHES MUST BE WASHED RINSED AND SANITIZED IN THE THREE COMP SINK.
