Inspector notes: FOUND PRE-COOKED SOUP SITTING IN HOT HOLDING UNIT AT 84F. ALSO OBSERVED EMPLOYEE REHEAT A CUP OF SAME SOUP IN MICROWAVE AND GIVE IT TO THE CUSTOMER WITHOUT VERIFYING INTERNAL TEMPERATURE OF PRODUCT. CUSTOMER BROUGHT BACK THE SOUP AND STATED IT WAS COLD(INTERNAL TEMPERATURE OF SAID PRODUCT 94F). INSTRUCTED TO REHEAT FRESH SOUP FROM WALK-IN COOLER MAKING SURE THE PRODUCT REACHES AN INTERNAL TEMPERATURE OF 165 DEGREES AND HOLD ALL SOUPS IN HOT HOLDING UNIT AT 140 DEGREES OR ABOVE UNTIL SERVED. CRITICAL VIOLATION 7-38-005(A).
