MANAGEMENT STORED 21.7# OF VACUUM PACKAGED MEATS IN THE FREEZER TAGGED HELD FOR INSPECTION. MANAGEMENT INSTRUCTED TO DISCONTINUE VACUUM PACKAGING AND CURING FOOD UNTIL A WRITTEN HACCP PROGRAM HAS BEEN APPROVED BY CDPH. SERIOUS VIOLATION 7-38-005A.
