Inspector notes: Observed hand sinks in kitchen with utensils (pans, scoops, containers, etc.) in 3 different sinks. Instructed all hand sinks must be easily accessible at all times. Hand sinks may only be used for hand washing at all times. Operator removed utensils from hand sinks and posted signs on each hand sink in kitchen. Operator discussed proper hand washing procedure with staff during inspection. Critical violation 7-38-030.

Inspector notes: Observed vacuum packaging machine in kitchen area. Observed vacuum packaged potentially hazardous foods (chicken stock) in freezer walk in. Instructed may not continue use of vacuum packaging machine. Facility must be given written approval from Chicago Department of Public Health to resume vacuum packaging. Vacuum packaging machine and vacuum packaged foods both tagged and held for inspection. Observed cooler in rear dock area containing potentially hazardous foods (such as soups, cooked mushrooms etc.) in unsecure area (Dock open and accessible to all tenants of the building and also to the general public). Instructed must protect all food stored in this cooler with a lock, or remove food items stored here. Operator added a lock to this cooler during inspection. Critical violation 7-38-005(a).
