Inspector notes: At time of inspection PIC did not have a testing device that worked for testing the sushi rice. When he did get it working it tested at 5.1. PIC could not provide any paperwork or HACCP plan approved. PIC will need to discontinue to make sushi until a HACCP plan has been provided to Health Division to review. 2=20-26 PIC was able to test the rice and had all the paperwork for the fish. We will need to see the results of the lab test. Please provide when you them them back.
